The Best Blueberry Muffins You'll Ever Have
Preheat the oven to 180°C.
In a small bowl, combine lemon juice, apple cider vinegar and milk. Set aside.
In another bowl, combine flour, baking powder, and salt. Set aside.
In a third bowl, mix together agave nectar, coconut oil, lemon zest, and vanilla extract. Add coconut milk/lemon juice mixture and stir to combine.
Gradually mix in dry ingredients until well incorporated.
Gently fold in blueberries.
Spoon mixture into muffin tins, filling each cup about ¾ full. Bake for about 25 minutes until golden and a knife inserted into the middle comes out clean.
Oh So Creamy Purple Mashed Potatoes
Steam or boil the potatoes and the cauliflower until they're really soft.
I personally don't peel the potatoes cause I like to live dangerously but it's up to you. The skin is really easy to peel off once cooked.
Place the cooked potatoes and cauliflower in a blender with the rest of the ingredients apart from the fresh herbs and mix until smooth and creamy. You can also mash everything by hand with a fork if you're feeling adventurous (or if you don't have a blender).
Add the chopped herbs at the end before serving.
Say 'oh my goat it's so creamy' while stuffing your face.
Miso Vegetable Soup with Soba Noodles
Walnut & Choc Chip Cookies
for about 15 cookies
250g flour of your choice
100g walnut chunks
60ml rice milk
60g agave nectar
50g vegan chocolate chips
30g walnut butter
30g melted coconut oil
1 ripe banana
1 tsp baking powder
1 tsp vanilla powder
or a few drops extract
In a bowl, mash the banana with a fork.
Then add the rice milk, the walnut butter and the melted coconut oil and mix well.
In another bowl, mix all the rest of the ingredients. Pour the liquid mixture on top of it and mix everything together well.
Form cookies on a baking sheet and bake in the oven for about 20 minutes at 180°C.
Quick Asian Noodle Salad Bowl
makes 4 servings
1 pack rice noodles
1 head of lettuce, chopped
1 cup chopped fresh coriander
1 cup chopped fresh mint
1 cup chopped fresh basil
1 cup chopped spring onions
1/4 cup tamari
1/4 cup rice vinegar
1 tbsp peanut butter
1 tbsp lime juice
1 clove grated garlic
1/2 tsp grated ginger
Start by cooking the ride noodles. Once they're cooked, drain them off and rince them in cold water.
Put the chopped lettuce at the bottom of your bowl and put the noodles on top of it. Cut the carrots and cucumber into machsticks or squares and add them to your bowl. Then add all the fresh herbs.
Mix all the ingredients of the dressing together and pour onto your salad bowl.
